Last weekend, I made Chinese Garlicky Pork and Eggplant as one of my dishes for Chinese New Year.
In college, it was one of my favorite dishes to order from the Chinese restaurant that we frequented. My mom informed me that it's one of the most unhealthy things I could order even though it has eggplant because they fry the eggplant and it soaks up a lot of oil.
I'd like to think my version is slightly healthier and a great accompaniment to rice.
Chinese Garlicky Pork and Eggplant
Ingredients
1/4 lb Ground Pork
2 Chinese Eggplants
5 cloves Garlic
1 Tbsp Soy Sauce
1 Tbsp Sugar
1 tsp Red Pepper Flakes *optional and adjustable
2 tsp Corn Starch
1/4 tsp Five Spice Powder
1 tsp Rice Wine
1/2 cup Chicken Stock or Water
1/4 cup Scallions (chopped)
Salt and Pepper to taste
1. In a bowl, mix together garlic, soy sauce, sugar, red pepper flakes, five spice powder and corn starch
2. After sauce is mixed together, stir in wine and chicken stock until fully incorporated. Set aside.
3. Julienne eggplant into planks approximately 1/4" x 2"
4. Spray a deep skillet with non-stick cooking spray and preheat to medium-high heat
5. Add pork, season with salt and pepper and cook through
6. Add eggplant slices and saute with pork until eggplant softens (approximately 2-3 minutes)
7. Add bowl of sauce into the skillet and increase the stove temperature to high
8. Stir everything together and allow sauce to thicken (approximately 3-4 minutes)
9. Sprinkle the top with fresh scallions
10. Serve with desired sides

In other news, I'm really enjoying the cool weather we've been having recently. I couldn't resist getting a run in this morning. In total, I ran about 4.8 miles in under 46 minutes so I was happy with that. My legs are feeling good so I'm hoping I can run both Saturday and Sunday morning!
I sprinted parts of the run aiming to get in an HIIT workout in.
Running always makes me feel better. Today, I didn't have to talk myself into working out. It was one of those days where my mind and body cooperated. (If only all days were like that, right?)

I like eggplant. I should try this dish sometime! I've never eaten it in a Chinese restaurant before. Yeah for cool weather and good runs. The heat will be making an appearance before you know it!
Thanks so much for posting this! The 5 spice...do you get that with all the other spices or is that with the international cuisine? I am totally going to try to make this.
Running outside is good. Cant wait for it to warm up a bit here so I can do that as well!
