Recipe: Brussels Sprouts and Sausage Pasta

I think I'm a food hoarder in that I like having a full freezer, fridge and pantry full of ingredients and products. It's the host in me that likes to be able to cook a myriad of dishes at any given moment. I don't know who I imagine would come calling at such short notice but it's probably the control-freak in me shining through.

Right now, my house has run out of whole wheat flour and all-purpose flour and it's nagging at me.

Do I really need it right this second? No...

Does my kitchen arsenal feel like it's missing something? Definitely...

We headed to Costco last weekend and I bought a giant bag of brussels sprouts. One way that I have been using it is finely cutting or chiffonade the brussels sprouts to saute in a different dishes. It's like cabbage with a more pronounced flavor.

One of the dishes I whipped up last weekend was a pasta dish that consisted of very little ingredients: turkey sausage, olive oil, brussels sprouts, garlic, onion, whole wheat pasta, parmesan cheese, salt, pepper, red pepper flakes, and oregano.

Sausage and Brussels Sprout Pasta


Ingredients
8 oz Ground Turkey Sausage
2 cups Brussels Sprouts
1/2 tsp Oregano
2 cloves Garlic (minced)
1/2 Sweet Onion (chopped)
2 Tbsp Grated Parmesan Cheese
1 tsp Olive Oil
3 cups cooked Whole Wheat Pasta
1 tsp Red Pepper Flakes *optional
Salt and Pepper to taste


1. Thinly shred brussel sprouts into thin ribbon-like pieces
2. Cook pasta according to package instructions. Drain and set aside.
3. In a deep skillet, heat a pan on medium-high heat and add olive oil
4. Add turkey sausage and saute until browned
5. Add onions and garlic to pan to saute for 3-4 minutes
6. Sprinkle oregano, red pepper flakes and salt and pepper
7. Fold in shredded brussels sprouts to mixture. Saute for 1-2 minute until it is slightly wilted
8. Fold in drained pasta
9. Sprinkle parmesan cheese over dish and serve

I'm one of those people that loves brussel sprouts! Gonna have to try this. I usually roast or saute mine, but I will be HAPPY to add this to my arsenal of food! :D

I've never had brussel sprouts but I'm seeing them pop up in recipes more and more lately. I may need to try!
