Blackout (for more than 35 minutes)

I know I've been away from blogging too long when my mom sends me a concerned private message over Facebook making sure if I'm okay. It's only been a week since my last blog but it's the longest I've gone without blogging in a long time.

I'm happy to report this doesn't mean I've been derailed by any means. I've taken a brief break to recollect my thoughts.

How was everyone's Super Bowl Sunday? Did you guys care about the results?

My boyfriend was rooting for the 49'ers since the linebacker Navarro Bowman played for Penn State. Normally my boyfriend is a Buccaneers fan...

My brother was rooting for the Ravens because...it's an animal.

In his words, "I always root for the animal."

Me? I was excited about three things: food, Beyonce and commercials. Destiny's Child performing was the icing on the cake. Jennifer Hudson and the Newtown choir were wonderful too.

Commericals this year were okay. I liked the Tide commercial and the Oreo commercial. The GoDaddy commercial was disgusting.

Did you have a favorite commercial?

I started Sunday morning with a nice 4.8 mile run. It was a great way to start the day before I started cooking.

If you know me, you know dinner is my lightest meal. I had our Super Bowl spread made by noon to be enjoyed for both lunch and dinner. Dinner was super easy. I had to reheat a few things, roast sweet potatoes and make more salad.

What was your Super Bowl menu?

Slow Cooker Turkey and Bean Chili
Baked Spicy and Sweet Wings
Pulled Pork
Fresh Pico de Gallo
Fresh Guacamole
Spinach and Cheese Dip
Mini Beef Sliders with Steamed Broccoli
Romaine Lettuce and Chopped Tomatoes





I started the chili the night before in the slow cooker. Super yum!

For lunch, I ate one slider and two wings since the boys both love those two dishes. I helped myself to a large mound of broccoli before I made a salad with a mish-mash of toppings: pico de gallo, guacamole, cheese dip, pulled pork and chili. 

Before the game started, I roasted potatoes and sweet potatoes in the oven to go along with all the dishes. The boys loved the potatoes but my favorite was the sweet potatoes.

This week is business as usual settling into my routine. I made sure our meals were especially light on Monday since both boys probably ate a bit too much on Sunday. I cut back on my own portions too.

The brief hiatus from blogging was much needed mentally. 

It's February! 1 month down....11 more to go :)

My hubs is a broncos fan, but was cheering for the Ravens because he went to high school with one of them!

I liked the M&Ms commercial where they were in relationships and what was okay and not okay (biting them).

I love that you had broccoli as a side to those sliders! I loved the Taco Bell commercial best, I was cracking up :)

You are such an amazing cook! The food looks sooo good :)
I didn't really care about the game (who won/lost) - I went to a friend's place for the food and social bit.
It's ok to take a social media break every now and again. Real life always comes first ;)

Didn't see the half time show, couldn't have cared less. My favorite commercials were the old ppl, the Dads being princesses for Doritos, & the high school kid going to the prom in his Dad's car. Food looks so yummy!
