Let them eat cake...

I turn another year older today. We're postponing the celebrating until this weekend since it's exam week in my brother's school.

I don't understand why they have exams after winter break. Thankfully, my brother is great at retaining information.

I asked my brother what kind of birthday cake I should make this year.

He excited responded, "Ice cream cake!"

The cake itself was super easy to put together. I used a Devil's Food Cake Mix. I separated the batter into three 8" tins and baked it off. I used two flavors of Haagen Dazs ice cream for the filling: French Vanilla and Mint Chocolate Chip. The topping was Lite Cool Whip.

Next time, I might trim the layers on top so it's perfectly flat. I'm also going to be more patient and wait for the ice cream to become more spreadable before making it. Overall, I'm pleased with the results.

For dinner, I made Turkey Sausage Lasagna and Broccoli Casserole. It was definitely an indulgent night but I kept it light throughout the day in terms of eating. I managed to do some pilates, yoga and stretching in the morning. I only had a bit of each savory item for dinner so I saved room for cake. Birthday cake is a MUST on any birthday. I don't remember a single birthday where I didn't have cake.

My legs are slightly sore from the run yesterday but it hurts so good. I'm hoping I can get another run in before the week is out!

I'm 27 now.... super scary how fast I'm approaching 30! I feel younger now than I did in my early twenties. I credit my lifestyle change. It's done wonders for my physical and mental health.

Just 1 candle...I didn't want to cause a fire hazard.


So much leftover even though the boys had seconds!




Such a cutie.
I hope year 27 is a wonderful year for me.

HAPPY BIRTHDAY! Great job on the cake! It looks delicious. Your year will be fabulous. I loved 27 for me, and I hope it is just as awesome. I'm now on 28 and hoping for rainbows and unicorns! So far, I've got it going the right direction. :)
